Plumped up Kale Guacamole


The days of consuming 1/4 or even just 1/2 of an avocado in a sitting are long gone. Unfortunately this is a bit of an expensive habit to break, with avocados reaching $2 a piece in many stores, but I can’t deny my body’s craving for an entire smooth, rich, haas avocado.  A little salt and a spoon and I’m happy as clam.

Once in a blue moon I like to dress up my avocados. Plain Jane is wonderful, but who doesn’t love some guacamole? I had this idea to try to “plump up” the guacamole to stretch an avocado a bit further. Maybe, just maybe, I could get 2 servings out of 1 avocado? I know, crazy ;)

With the addition of the hearty green vegetable, kale, I was able to do just that. I got two decent sized bowls out of just a single avocado, and was able to actually save some for later! Mission accomplished.

Plumped up Kale Guacamole

  • 4 stalk of Raw Kale
  • 1 Haas Avocado
  • 2 medium plum tomatoes 
  • Juice of 1 Lime
  • 1 Clove or 1 tsp minced garlic
  • Handful of fresh Cilantro
  • Cayenne, Salt, Pepper

In a food processor combine the leaves of kale, 1/2 of the avocado, juice of the lime, minced garlic, and pinches of each spice. Process until smooth and then place into a mixing bowl. 

Dice up the tomatoes and other 1/2 of the avocado and add into the mixing bowl. Add in fresh cilantro. Mix with a fork until combined. Taste and adjust spices to your liking. 

Serve with veggies or on top of eggs or a salad or of course enjoy with just a spoon!
