3 Ingredient Paleo {Coffee} Pancakes

It seems like nearly everyone has a similar issue when it comes to switching to paleo…. BREAKFAST!

Sick of eggs. Don’t have enough time. Can’t do savory in the morning. Don’t feel like eating anything at all. Out of ideas all together.

Sound familiar?

I’m in a small minority of people who can eat the exact same breakfast for months and not grow tired of it. I’m on about a 4 month streak of the same scramble of eggs right now. But not everyone falls into this category. And this recipe is for you.

When I do have the off chance of sleeping in and having a leisurely breakfast, I’ll still keep it quick and simple. 3- ingredients- simple. This can also easily be made on a weekday in all of 10 minutes start to finish. This may very well solve all  your breakfast needs.

3 Ingredient Paleo {Coffee} Pancakes

  • 1.5 Ripe Medium bananas
  • 2 eggs
  • 1 Tbsp finely ground coffee
  • Pinch of salt and optional dash of cinnamon

Heat a skillet over medium heat with a Tablespoon of fat (coconut oil works well).

Mash the bananas in a bowl with a fork. Whisk in the eggs and mix well until combined. Add in coffee grinds, salt, and cinnamon and continue to mix until a smooth batter is formed. Scoop 1/4 cup of batter onto the skillet at a time and flip once bubbles start to form on the top layer (about 2 minutes each side, turning the heat down slightly toward the end of the cooking time). These are delicate pancakes so flip gently.

Makes 5 small pancakes. Serve warm with anything you like!

*If you don’t like coffee you can leave out the grinds and add in any mixture of nuts, spices and extracts to make these your own.
